    A modest building with tiles that evoke a bygone era stands on a side street in Finsbury Park, where double-decker buses roar past kebab joints and laundromats. What it means to eat out in London has been subtly redefined here by Tollingtons Fish Bar. Once a simple fish and chip shop, it has been transformed into a remarkably unique dining destination that combines the character of a North London boozer with the intimacy of a backstreet San Sebastián pintxo bar.

    The restaurant, which is run by Gareth and AC, who are most known for their hands-on approach at The Plimsoll, exudes a modest confidence that is especially uncommon in the current dining scene in the capital. Using a combination of repurposed items and refined intuition, they have completely changed the area. There are repurposed stools, church pews bolted into tiled walls, and the kind of communal energy that comes from doing things correctly, not loudly, without any ostentatious finishes or Instagrammable neon signs.

    The front room is always packed, with patrons standing shoulder to shoulder, sipping Estrella directly from the tap, and balancing plates of devilled crab and sardines on mismatched counters.     At Tollingtons, the menu is surprisingly straightforward. At first glance, a plate of Chips Bravas appears to be familiar. However, after just one bite, it has significantly improved—crispy but tender potatoes covered in a smooth aioli and a robust bravas sauce that has obviously been refined through constant testing. Even though this food doesn’t say much, it makes an impression. The depth of the grilled sardines is reminiscent of summer evenings on the Cantabrian coast. Truffle-topped scallops exude luxury without drawing attention to themselves.
